Cold weather and a sunny but windy day … the perfect dish is Pasta&Fagioli !!! The recipe i use is really “light” ( no bacon, no lard ) but savory !!!
Soffritto with onion, carrot and celery, put the Borlotti beans in the soffritto for a while. When the beans became tasty, put water and rocky salt. Cook slow for an hour, moderate heat. When the beans are soft and tender, put pasta (short pasta like “ditalini”) and cook for the 10 minutes … Pasta&Fagioli is ready !!! Buon Appetito !!!
