Sometimes happens i have less than an hour to cook ” a meal” and one of my favourite “recipe solutions” is
Radicchio is a variety of salad, red and a little bit bitter. Very common in Italy. It’s good in mix salads but i like it more roasted in the oven or grilled on the barbecue with some drops od extravergine olive oil, salt and herbs.
Tortiglioni Radicchio&Gorgonzola ( 2 persons )
a head of Radicchio
100gr Gorgonzola cheese
200gr Tortiglioni ( you can use also Penne, all kind of short pasta)
In a saucepan sautè the onion in Extravergine Olive Oil. Slice Radicchio, add it with half glass of water and salt. Cover and cook for 10 minutes. When radicchio appears wilted, add gorgonzola. Continue to cook, low heat, until the cheese is melted. Cook Tortiglioni, when they are ready, drain the pasta and add to radicchio&gorgonzola sauce, stir to combine.
