Torta salata di riso, broccoli e aglio selvatico

Yesterday some friends found wild garlic in the wood around Fauglia. Wild Garlic, or wood garlic, is one of the edible, growing wild, common plants in Tuscany.  Wikipedia says”:  it grows in deciduous woodlands with moist soils, preferring slightly acidic conditions”.  My tuscan friends are teaching me how to recognize and use in the kitchen all the wild flowers, herbs and bulbs that grow in Tuscany . I’ve decided to start, with this recipe, a section called “Growing wild food” where i’ll post recipes based on food that grows wild in grasses, woods and fields !!!

Some wild garlic

 

 

 

Boil 100gr of parboiled rice. When the rice is cooked and strained, put it in a pan with some butter and let it fry for a while. Put some chopped wild garlic and mix; put boiled and chopped broccoli and mix , at the end,  put 50gr of gongorzola and mix all together for 10 minutes. In a bowl beat 4 eggs with some milk, salt and pepper and pour the fried rice&vegetables in it and mix. Pour all the mixture in a baking pan, sprinkle some grated pecorino cheese on top and put the pan in the oven 150°C for 30 minutes.
